Can you “add” places to your GPS?

First of all, I don’t own a GPS, so I don’t really know what I’m talking about, but I do use VZ navigator and understand the general workings of a GPS system, such as TOM TOM. I want to know if I can add places, such as new stores that pop-up in my neighborhood. The store is so new that the GPS software does not have it, but could I somehow map-tac my GPS to be associated with (for example) “Walmart in Joliet, IL.” I just fear that I live in a new area with which the revs of GPS software will never be able to keep up. I’ve used many GPS units in the field with topo software, though have yet to purchase a vehicle GPS unit. I’m wondering, do any (Tom Tom, C330, Nuvi) allow you to view the exact UTM coordinate of your location? Do they also allow you to switch which datum your using? Please don’t answer unless you understand what I’m talking about.
